I have to confess, we are moved by the stomach.
Each big day that is celebrated in the city, or in the area or at home, moves around a table.
The 28th of April was San Prudencio.
And the big two leads are "perretxiko" and snails.
Perretxiko is a tasty little mushroom that grows these days. Prices go up for this day. People use them to full the snails or to take them into omellette.
Snails are prepared with meat and tomatoe sauce and filled with perretxikos...depending on the recipe one uses.
So who is afraid of mixing and matching with food?

Cada fiesta, cada celebración, cada acontecimiento tiene una comida típica asociada.
El 28 de abril fue San Prudencio. Patrón de Álava.
Y los dos grandes protagonistas son los perretxikos y los caracoles.
El perretxiko es una seta de temporada muy apreciada, de mucho sabor y que estos días alcanza precios astronómicos. Se suelen usar para rellenar los caracoles o para comerlos en revuelto.
Los caracoles, se suelen comer con una salsa de tomate y carne y se suelen rellenar con perretxikos...todo dependiendo de la casa en la que preguntes la receta.
¿Quién dijo miedo a la hora de mezclar y hacer casar los sabores de la comida?

EliminarI'm all for mushrooms - love them! - but snails just aren't for me, despite the fact that they're free around here, abundant and health (or so I'm told). maybe I should try them with mushrooms! :)

EliminarI don't have the courage to try snails ... those mushrooms are really expensive. Is the price per kilo?
